I’ve been adding it to almost everything I bake, but what are the specific health benefits?
There are omega 3s in flax seed but they are mostly destroyed when you bake it. The oil from the seeds contains the omega 3s but are much less potent than fish-sourced omega 3s, which do not require conversion in the human body like flax seed omega 3s do.
There are numerous nutrients, minerals and vitamins in flaxseeds, just like almost any fresh food, but the truly noteworthy benefit is from the fiber content, which is apparently an excellent balance of soluble and insoluble fiber.
Fiber is excellent for the digestive system, and for a healthy heart. The fiber will survive the baking.
Ground Flax seeds need to be refrigerated or the oil content will go rancid quickly (within a day) and will actually be bad for your health. If you grind small batches as you use it, then the whole seeds can stay room temp.
Flax seed oil is available at your local healthfood store and has more omega 3 content than the seeds, but less fiber content.
Started dieting a month ago. Eating right and exercising daily. I have lost 17 pound already.
Put your search engine to use and look it up. I’m sure there’s a wealth of information on benefits and detriments (if any) to taking flaxseed.

Ground flax flower can be added to a fruit smoothy. Whole seeds can be blended in a blender as well or used in home made bread.
Flax seed oil is used in place of butter for all your buttery stuff like steamed veggies, rice, potatoes, hot cereal etc.
It is an omega oil that is essential for proper cellular function and has been shown to reverse heart disease.
Stay away from man made oils. Labels on processed foods that say "hydrogenated" are those man made oils that contribute to heart disease.

I hear that flax seed oil is great for women, and I see the health food stores selling this product, but the bottle never explains what flax seed oil does for you. Please explain. Thanks!
